Orange Delights

Ingredients for 4 people

  • The zest and juice of 2 oranges.
  • The juice of 2 lemons.
  • 3 cups of sugar.
  • 1 tablespoon of natural vanilla essence.
  • 1 ¾ cups of water.
  • 2 gelatine leaves.
  • 2 tablespoons of cornflour.
  • 125 grams of icing sugar.

Preparation

Put the orange zest and juice, the lemon juice, the sugar and the vanilla in a pot. Pour 6 tablespoons of water into a heatproof bowl and add the gelatine. Add the remaining water to the sugar mixture.
Heat the mixture, stirring, until the sugar dissolves. Then bring to the boil, stopping stirring. Boil until the syrup reaches the right point. Notice that it forms a soft ball that can be kneaded with the fingertips.
Place the gelatine bowl over the pot and stir it until it dissolves completely. Add a ladleful of syrup to the gelatine, stir very well and then pour this into the syrup pan. Rinse a 15-centimetre square mould with cold water and pour the mixture into it. Let it cool and then put it in the fridge.
Mix the cornflour and the icing sugar. Use a knife floured with cornflour to cut the orange delights into thick pieces, and coat them one by one in the sugar and cornflour mixture.
