Dates Stuffed with Orange and Almond

Ingredients for 4 people

  • Zest and juice of one orange.
  • 60 grams of sugar.
  • 125 grams of chopped almonds.
  • 2 tablespoons of chopped pistachio.
  • 12 dates, pitted, peeled and opened in half.
  • Icing sugar to coat.
  • Pistachios cut in half for decoration.

Preparation

Put the orange zest and juice in a pot with the sugar and heat over low heat until the sugar has dissolved. Boil it for 2 minutes and remove it from the heat. Mix the chopped almonds and pistachios with the juice to make a thick paste and let it cool.
Roll a small portion of the paste into a sausage shape and put it inside each date.
When they are all filled, roll them in the sugar, place them in petit-four moulds and finally decorate them with the pistachio halves.
