Glazed Orange Peel

Ingredients for 4 people
- 4 oranges
- 2 cups of sugar

Candied orange peels need more than a week to prepare, because they must be cooked and left to soak in syrups of different densities until they are completely saturated. We offer a quick method to glaze peel, which can be used for cooking or to coat with a layer of chocolate. It is also excellent to serve with coffee.
Cut the peel of four large oranges lengthwise into four parts. Then cut each part into four or six pieces and put them in a pot. Cover them in cold water and let them boil for 20 minutes. Drain and reserve 2 and 1/2 cups of the liquid. Pour the remaining liquid back into the pan and add 2 cups of sugar, stir until it dissolves and then add the peel and bring it to the boil, simmering it for an hour over low heat.
Put a little sugar on a plate. Drain the peels completely, keeping the syrup to use in other desserts, and roll the pieces in sugar until well coated. Spread them on waxed paper and leave them in a warm place until they are solid and dry; keep them in an airtight container. To make chocolate orange sticks, dip pieces of this peel in melted chocolate until they are completely coated. Let them dry on waxed paper.
