Valencian Paella

Ingredients for 4 people
- Two large peppers, with good flesh, red or green (or one of each colour).
- Two aubergines.
- Green beans, 250 grams.
- 3 or 4 artichokes.
- A handful of tender broad beans.
- A bunch of spinach.
- A bunch of chard.
- 300 g of oil.
- 100 g of tomato.
- 500 g of rice.
- Three or four garlic cloves, chopped.
- Salt, paprika, saffron.
Preparation
With the oil hot, sauté the garlic; then gradually add the aubergine, the green beans, the pepper, the spinach, the chard and the artichokes; after all of that, the tomato and the broad beans. When the mixture is sautéed, add the paprika and immediately the water, the salt and the saffron. Let it boil until all the vegetables are well cooked; it is time to add the rice, adjusting the salt and adding the water that has evaporated (always calculating roughly 1 part of rice to three of water). The cooking time of the rice will be indicated on the packet, and if it is not indicated, between 15 and 20 minutes. Once dry, let it rest a few minutes.
