Prawns with Mushrooms

Ingredients for 4 people
- The peel of one lemon.
- 2 tablespoons of tarragon.
- 4 chopped shallots (French onions).
- Salt and pepper.
- 500 grams of cooked and peeled prawns.
- 300 grams of mushrooms, cut in half if large, into quarters if very large.
- 2 tablespoons of olive oil.
- 2 tablespoons of butter.
Preparation
Cut the peel of one lemon into thin strips and put them to cook in a saucepan covered with water. When they boil, lower the flame and keep them on low heat for 5 minutes. Drain them and put them in a bowl. Add the tarragon, the shallots, plenty of salt, pepper and the prawns. Mix all these ingredients and the mushrooms well. Cover and let rest 1 hour.
Heat the oil and the butter in a pan. Pour the mixture into it, emptying the contents of the bowl well, sauté the mixture over low heat for 5 minutes, stirring the ingredients the whole time until they are very hot. Serve immediately.
