Pork Skewers

Ingredients for 4 people
- 1 kilo of boneless pork in small cubes.
- 2 tablespoons of mustard.
- The zest and juice of one orange.
- 2 tablespoons of brandy.
- 1 tablespoon of chopped rosemary.
- Salt and pepper.
- 2 red peppers, deseeded and chopped.
- 2 onions cut into thick pieces.
Preparation
Place the pork in a large bowl. Add the mustard, the orange zest and juice, the brandy, the rosemary, salt and pepper. Mix the pork well with the ingredients so it takes on the flavour. Cover and let marinate in the fridge overnight.
Thread the pork pieces onto metal skewers, alternating with the pieces of red pepper and onion. Cook the skewers in the oven, without placing them too close to the grill, for 10 to 15 minutes per side, until well done. Baste them with the stock and the rest of the marinade to prevent them from drying out.
A bed of rice mixed with butter and chopped parsley with a green salad can be the perfect accompaniment for these skewers, which are also ideal for the barbecue.
