Tuna with Orange

Ingredients for 4 people
- 1/2 onion, finely chopped.
- 1 bay leaf.
- 1 clove of garlic, chopped.
- The zest and juice of one orange.
- 1/2 glass of red wine.
- 1/2 glass of water.
- 4 tablespoons of olive oil.
- Salt and pepper.
- 700 grams of tuna cut into 4 pieces.
- 2 tablespoons of butter.
- 1 tablespoon of chopped parsley.
Preparation
Mix the onion, the bay leaf, the garlic, the zest, the juice, the wine, the water, the salt and the pepper in a small pot. Simmer it all over low heat for 20 minutes and then let it cool. Place the tuna pieces on a shallow plate and pour the cold marinade over them. Cover and let marinate in the fridge overnight.
Drain the tuna well and grill it 5 minutes per side, according to the thickness of the steak, brushing it from time to time with the marinade. While the tuna grills, boil the marinade until it is reduced by half. Put the tuna on hot plates and, with a spoon, pour the marinade over each portion. Serve immediately.
