Rice with Beans and Turnips

Ingredients for 4 people
- 300 grams of pork (snout, trotter, vertebra).
- 200 grams of veal.
- 50 of bacon.
- 1 or 2 onion blood sausages or a morcón.
- 150 grams of soaked dried beans.
- 1 turnip.
- 150 grams of oil.
- 200 grams of rice.
- Salt and paprika.
Preparation
Put the chopped meat and the beans on the heat in cold water, in a pot of sufficient capacity. When half-cooked, add the turnips, peeled and in pieces. When everything is almost cooked, sauté a teaspoon of paprika in the hot oil of a pan and pour it immediately into the pot. Let it boil a few minutes and add the morcón or the blood sausage, the salt and adjust the water (double the liquid to rice). Put the rice to cook for about 18 minutes, letting the rice become thickened, that is, neither too soupy nor dry.
