Rice with Beans and Chard

Ingredients for 4 people

  • 250 grams of tender chard.
  • 100 grams of beans soaked the night before.
  • A dozen snails.
  • 50 grams of potato cut into small cubes.
  • 100 grams of oil.
  • 200 grams of rice.
  • 100 grams of chopped tomato.
  • Paprika, salt.
  • And a pinch of ground black pepper.

Preparation

Put the well-cut chard and the beans to boil in cold water; when half-cooked, add the potato pieces. In a pan, sauté the tomato; once sautéed, add a teaspoon of paprika and pour everything into the pot where the beans and chard are boiling. Let it boil until everything is cooked and add the snails, previously cleaned and starved; after ten minutes add the salt, the saffron and a pinch of black pepper, adjust the water and add the rice (let it cook 15 or 18 minutes), making sure it does not stay too soupy, but with a thickened broth.
