Mussels in Garlic and Orange Sauce

Ingredients for 4 people

  • 1 kilo of mussels.
  • 2 tablespoons of olive oil.
  • 2 cloves of garlic, crushed.
  • 1/2 onion, finely chopped.
  • The zest of one orange.
  • The juice of two oranges.
  • Salt and pepper.

Preparation

Clean the mussels well and rinse them. Heat the oil in a large pan, add the garlic, the onion and a bay leaf and sauté for 5 minutes. Stir and add the orange zest. Mix the orange juice with a cup of water and add it to the pan, season and simmer for 5 minutes.
Add the mussels, bring to the boil and lower the heat slightly, then cover tightly and let boil for 5 or 6 minutes until the mussels open.
Drain them, return the stock to the pan and continue boiling until it reduces by half. Divide the mussels among four plates, pour what remains of the juice over the mussels and serve immediately, with bread to dip in the sauce.
