Couscous Salad

Ingredients for 4 people
- 1 cup of couscous.
- 1 ¼ cups of boiling water.
- 6 chopped shallots.
- 2 celery stalks, diced.
- 1 red pepper, diced.
- 2 tablespoons of chopped parsley.
- The zest and juice of 1 lemon.
- 1 clove of garlic, salt and pepper.
- 1 teaspoon of caster sugar.
- 4 tablespoons of olive oil.
Preparation
Put the couscous in a bowl and pour the boiling water over it. Cover and leave to rest for 30 minutes. By then the grains will have swollen and absorbed all the water.
Add the shallots, celery, red pepper and parsley to the couscous. Separately, mix the lemon zest and juice, garlic, salt, pepper and sugar well in a small bowl, until the sugar has dissolved. Gradually add the oil and pour this dressing over the salad, mixing lightly, and let it rest for about 30 minutes before serving.
