Coconut Salad

Ingredients for 4 people
- 125 grams of fresh coconut pulp.
- 1 tablespoon of icing sugar.
- The zest of one lemon.
- The juice of ½ lemon.
- 1 clove of garlic, crushed.
- 4 chopped shallots.
- 2 tablespoons of chopped mint.
- 1 tablespoon of soy sauce.
- 1 tablespoon of sesame oil.
- 1 tablespoon of olive oil.
Preparation
This slightly oriental salad whets the appetite. It is quick and easy to prepare and is ideal to serve with roast chicken or grilled fish; serve it as a first course of an oriental menu.
Grate the coconut pulp and mix with the sugar, the lemon zest and juice, the garlic, the shallots, the mint and the soy. Mix the ingredients until the sugar has dissolved and then mix in the oils; it is now ready to serve.
