Mushrooms in Orange Marinade

Ingredients for 4 people

  • 6 tablespoons of olive oil.
  • 1 small onion, finely chopped.
  • The zest and juice of one orange.
  • Salt and pepper and two cloves of garlic, chopped.
  • 1 tablespoon of vinegar.
  • 450 grams of small mushrooms.
  • 2 tablespoons of chopped parsley.
  • 8 basil leaves, torn.
  • A few orange slices, halved or quartered.
  • A sprig of basil.

Preparation

Fry the onion with two tablespoons of oil in a small pan for 5 minutes, stirring. Whisk the orange zest and juice with the salt, pepper, garlic, marjoram and vinegar. Add the rest of the oil to the fried onion, set it aside and whisk it with the orange mixture to obtain a slightly thick marinade.
Place the mushrooms in a shallow bowl and pour the marinade over them. Mix well, cover and leave to marinate for at least three hours before serving, stirring occasionally.
Add the parsley and basil to the mushrooms just before serving. Mix well and serve on individual plates. Garnish with orange segments and sprigs of basil.
